Three pounds is the real answer to how many apples for apple pie

A 9-inch pie needs about 3 pounds of whole apples, which is 6 to 9 apples depending on size. Here's what each apple size weighs, how many fit in a pound or a cup, and the calories in an apple from USDA data.

Three pounds of whole apples fills a standard 9-inch pie, and that weight is the most reliable answer to how many apples for apple pie. Counting apples only gets you close. One apple in the bin can weigh nearly twice as much as the one next to it, so a recipe that says "8 apples" is really a guess.

Size is the whole problem. USDA data puts a medium apple at 182 grams and an extra small one at 101 grams, which means eight apples can land anywhere from under 2 pounds to almost 4. Below you'll find the weight of every apple size, how many fit in a pound or a cup, what that does to your filling, and the calories in each one.

How many apples for apple pie, counted by weight

Recipes are all over the map. A roundup from Food Republic found most 9-inch pie recipes call for 8 to 12 apples, about 10 medium on average, with 3 to 4 pounds as the common weight range. A few go as high as 5 pounds, roughly 15 Granny Smiths.

Weight cuts through that noise. King Arthur Baking found a pound of whole apples gives you about 3 cups once peeled, cored and sliced, and that you need about 2 3/4 pounds from the store for 8 cups of slices. So 3 pounds gets you roughly 9 cups, a generous dome under the top crust.

Shopping rule: buy 3 pounds of whole apples for one 9-inch pie. After peeling and coring you'll have about 9 cups of slices, which is enough to mound high without overflowing.

Standard 9-inch pie: 3 pounds whole apples, about 9 cups sliced
8 cups of sliced filling: buy about 2 3/4 pounds of whole apples
6 cups chopped for a crisp: roughly 2 pounds of whole apples
Deep dish or tall dome: lean toward the 4 pound end of the range

Deep-dish pans and recipes written in cups

If your recipe lists cups of sliced apples instead of a count, divide by 3 to get pounds of whole fruit. A recipe asking for 12 cups needs about 4 pounds, which matches the top of that 3 to 4 pound range most bakers use for deeper pans.

How much does an apple weigh by size?

The USDA FoodData Central entry for raw apples with skin gives a weight for each size, measured by diameter. Here's how those numbers convert to ounces and apples per pound. Plug any apple weight into our grams to ounces converter if yours falls in between.

Apple SizeWeightPer Pound
Extra small, 2.5 in across101 g (3.6 oz)about 4.5
Small, 2.75 in across149 g (5.3 oz)about 3
Medium, 3 in across182 g (6.4 oz)about 2.5
Large, 3.25 in across223 g (7.9 oz)about 2

Notice that the USDA medium is heavier than most supermarket apples. Chowhound puts the average apple weight at 4 to 6 ounces, which is why the familiar rule of 3 apples per pound really describes a small apple. If you need a refresher on the pound itself, here's why a pound is 453 grams.

How many apples in a pound, by variety

Variety matters less than you'd think. Food Republic's counts come out to about 2.8 Golden Delicious, 2.9 Gala or Honeycrisp, and 3.1 Granny Smith per pound. Every common baking apple sits close to 3.

A large apple is only half an inch wider than a small one, yet it weighs 74 grams more. That's about 50 percent more fruit hiding in a size difference your eye barely registers.

Eight apples can mean 2 pounds or 4, and that costs you

Run the math on a recipe that just says 8 apples. Eight extra small apples weigh about 808 grams, or 1.8 pounds. Eight large ones weigh 1,784 grams, or 3.9 pounds. Same count, more than double the fruit.

You pay by the pound at the register, so that bag of large apples costs about twice as much as the small ones for the same count. Then the pie pays too: a thin filling sinks and leaves a hollow under the crust, while an overloaded one bubbles over and steams the bottom crust. Buying 3 pounds by weight means you pay for exactly one pie's worth of fruit.

Weigh at the store, then again at home

Use the produce scale to bag 3 pounds, then check your prepped slices at home. Three pounds is 1,361 grams, and losing about 30 percent to peel and core leaves roughly 950 grams of filling. If your kitchen scale reads oddly, calibrate it with a nickel first.

How many apples in a cup of slices or chunks

USDA weighs a cup of apple slices at 109 grams and a cup of chopped apple at 125 grams. King Arthur's own estimate is about 3 1/2 ounces per cup, and Food Republic says one medium apple yields about 1 1/3 cups once prepped.

1 cup sliced apples: 109 grams, per USDA
1 cup chopped apples: 125 grams, per USDA
1 medium apple: about 1 1/3 cups of slices once prepped
1 pound of whole apples: about 3 cups ready for the pie

Slices stack loosely and chunks pack tight, so the same measuring cup swings by 16 grams depending on how you cut. Grams don't care about the knife.

That same packing problem is why flour is so unreliable by volume. Our flour cups to grams chart covers the crust side of the pie.

Calories in an apple and apple nutrition facts

Per 100 grams, a raw apple with skin has 52 calories, 13.8 grams of carbohydrate, 2.4 grams of fiber and 10.4 grams of sugar, according to USDA. Medium apple calories land at about 95, with 25 grams of carbs and 4.4 grams of fiber. Size changes the count more than variety does.

Small apple, 149 g: about 77 calories and 21 g carbs

Green apple nutrition compared with red

Granny Smith comes in at 58 calories, 2.8 grams of fiber and 9.6 grams of sugar per 100 grams. Red Delicious has 59 calories, 2.3 grams of fiber and 10.5 grams of sugar. The green apple wins on fiber by a hair, but it's a rounding-error difference.

Calories in a Honeycrisp apple

USDA's standard reference list doesn't break out Honeycrisp on its own, so use a close cousin. Food Republic's count of 2.9 Honeycrisps per pound works out to about 156 grams each, and at Gala's 57 calories per 100 grams that's roughly 89 calories. A big 300 gram Honeycrisp would be closer to 171, so weigh yours and multiply the grams by 0.57.

Quick answers to common apple weight questions

What is the average apple weight in grams?

USDA's medium apple is 182 grams, or 6.4 ounces. Grocery store apples often run smaller, around 4 to 6 ounces, which is 113 to 170 grams. Weigh one from your own bag before you trust either number.

How many apples in a pound once they're sliced?

Plan on about 4 whole apples to get one pound of cut fruit. Peeling and coring removes roughly 30 percent of the weight, so you need an extra apple compared with the 3 that make a whole pound.

Should I weigh apples before or after peeling?

Weigh them whole when you shop. When a recipe says "3 pounds apples, peeled, cored and sliced," buy 3 pounds whole and expect a little over 2 pounds of filling after trimming.
