So how much does an egg weigh, a large one is 50 grams cracked

A large egg weighs about 50 grams once you crack it, and roughly 57 grams with the shell still on. That's the number most recipes are built around, so if you've ever wondered how much does an egg weigh, 50 grams is the answer that matters for baking.

The catch is that cartons don't promise 50 grams per egg. Egg sizes in the US are set by the total weight of a dozen, so a single large egg can land a few grams over or under. Below you'll find a full egg size chart in grams, the white and yolk split, protein per egg, and what each size really costs you.

How much does an egg weigh at each size?

The USDA sets a minimum net weight for every dozen, from 15 ounces for peewee eggs up to 30 ounces for jumbo, according to the size classes Eggland's Best reproduces in its FAQ. Divide by 12 and you get the average in-shell weight of one egg. We converted those ounces with the ounces to grams converter so you don't have to.

Medium21 oz50 g in shell
Large24 oz57 g in shell

Jumbo30 oz71 g in shell

Notice that a medium egg in its shell weighs about the same as a large egg out of it. The gap between in-shell and cracked, roughly 7 grams on a large egg, is mostly shell plus the bit of white that clings to it.

Each step up in egg size adds 3 ounces per dozen, which works out to about 7 grams more per egg, in shell.

Egg sizes are graded by the carton, not the egg

What the USDA grade really measures

Size on the label is a minimum for the whole dozen. A carton of large eggs has to weigh at least 24 ounces of egg, but nothing stops one egg from weighing 53 grams in shell while its neighbor weighs 62. The total is what's checked.

Why two large eggs can differ

Because the rule covers the dozen, individual eggs in one carton aren't matched to each other. That's why weighing beats counting when a recipe uses four or more eggs. A cheap scale, checked with the nickel calibration trick, settles the question in seconds.

A peewee dozen needs only 15 ounces, half of jumbo's 30
Large is the default size for most recipe testing
Large dozens weigh 3 ounces more than medium dozens
A dozen is graded on total weight, not per-egg weight

Large egg weight, split into white and yolk

The King Arthur ingredient weight chart lists a fresh large egg at 50 grams, or 1 3/4 ounces. The white accounts for 30 to 35 grams of that, and the yolk comes in at 14 grams.

Egg yolk weight matters most in custards

Custards, curds and ice cream bases lean on yolks for richness and set. A recipe that calls for 6 yolks expects about 84 grams, so if your eggs run small you'll want a seventh yolk. Whites are more forgiving, but meringues and macarons still behave best when you weigh them.

Whole large egg out of the shell: about 50 grams
Large egg white: 30 to 35 grams
Large egg yolk: about 14 grams
Shell and membrane: roughly 7 grams by difference

Roughly two thirds of a large egg's weight is white, which is why a cup holds 7 large whites but 14 large yolks.

How much protein in an egg, by the gram

One large egg carries 6 grams of protein and about 70 calories, according to the American Egg Board. The white holds 3.6 grams of that protein with only 17 calories, while the yolk holds 2.4 grams and 53 calories.

How much protein in a boiled egg?

Boiling sets the protein but doesn't take any away, so a hard boiled large egg still gives you about 6 grams. If you're logging food by weight, a jumbo egg will bring more than that and a medium one a little less.

Large egg: about 6 grams of protein, 70 calories
Large egg white: 3.6 grams of protein, 17 calories
Large egg yolk: 2.4 grams of protein, 53 calories

What egg sizes cost you per ounce

Grade A large eggs averaged $2.27 a dozen in September 2026, per the BLS price series on FRED. With a 24 ounce minimum, that's about 9.5 cents per ounce of egg, or around 19 cents per large egg.

Since jumbo cartons hold at least 30 ounces, they carry 25% more egg than large. At that $2.27 price, jumbo is the better buy whenever it costs less than about $2.84. Medium eggs flip the math: a 21 ounce dozen only beats large if it's under roughly $1.99.

Protein follows the same logic. At 19 cents for 6 grams, a large egg works out to a bit over 3 cents per gram of protein, so the cheapest ounce on the shelf is usually the cheapest protein too.

Swapping egg sizes without ruining a bake

The Incredible Egg size conversion chart shows how to trade sizes when your carton doesn't match the recipe. For one to three large eggs, most sizes swap one for one; the gaps open up around four eggs and beyond.

Measuring by volume works too. One cup equals about 5 large whole eggs, 7 large whites or 14 large yolks. For flour and sugar, the same weigh-it-first habit applies, and our flour cups to grams chart covers that side of the bowl.

01Crack the eggs into a bowl set on a zeroed scale
02Multiply the recipe's large egg count by 50 grams
03Whisk, then pour off or add egg until you hit that target
04Save leftover beaten egg for an egg wash or scramble

Rule of thumb for any recipe: number of large eggs times 50 grams. Hit that total and the egg size on the carton stops mattering.

Egg weight questions people actually ask

How many grams in an egg without the shell?

A large egg comes to about 50 grams once cracked. For other sizes, take the in-shell figure from the chart above and knock off roughly 7 grams of shell for a working estimate, then weigh if the recipe is fussy.

How many grams of protein in an egg white versus the yolk?

In a large egg, the white has 3.6 grams and the yolk has 2.4 grams. That's 6 grams in total, so the white supplies about 60% of the protein in one egg.

Can I check egg weight in grams without a kitchen scale?

Yes, roughly. A large egg in shell weighs about 57 grams, a little more than half of 100 grams, and our guide to things that weigh 100 grams lists household items you can compare against. For a quicker read, a photo-based scale app gives you an estimate without any reference objects.
